The Evergreen Celebrates Dining Together with new Dishes

It’s always exciting when the chef debuts a new menu at your favourite eatery. And when that chef is Max Charbonneau and that eatery is The Evergreen in the Royal Canadian Lodge, you know it’s going to be great. This spring, Chef Max and his team are introducing a few new dishes that celebrate the fact we can dine together once again in the Evergreen’s well appointed, comfortable dining room. 

We begin with a decadent baked double cream Brie, which is perfect for sharing. Enveloped in a crispy phyllo pastry, this creamy Brie is infused with candied pecans and cranberries and accompanied by some spicy pickled vegetables to balance the rich cheese. Fresh-baked parmesan baguette rounds complete the dish, which is so flavourful and offers such delightful textures, you might not want to share at all. Pair it with the new chambord sour cocktail and you’ll be off to a delicious start.

Carrying on with the crispy creamy theme, the Atlantic lobster and Yukon gold potato cakes take you on a culinary adventure that spans the country. These golden, crispy flavour-bombs combine lobster, potatoes, scallions and red bell peppers and are beautifully plated with a lemon-safforn aioli and frisee lettuce topped with a salty oil and vinegar dressing. 

For the main course, you’ll definitely want to try the oven-roasted chicken supreme, which features lobster and crab meat in a fresh chicken breast topped with house-made citrus hollandaise sauce, herb risotto and steamed asparagus. It’s decadent, it’s rich and it’s delicious. 

You can’t leave The Evergreen without having dessert. We very much enjoyed a tangy, fluffy lemon souffle crusted with sliced almonds - the perfect way to end a meal with a cup of coffee. 

Once you’ve tried the new additions to the menu, you can always return to some of the classic favourites like the steamed mussels, Quebec Brome Lake duck, a can’t-lose Alberta steak, or one of The Evergreen’s famous gourmet burgers. You can always count on the freshest ingredients, locally sourced whenever possible, and a creative and delicious approach to food in this kitchen - it’s definitely one of Banff’s hidden gems! 

Breakfast is daily Mon.-Sun. 7-11 a.m.  Dinner and Lounge Tues.-Thurs., Sunday 4- 9 p.m.  and Fri./ Sat. 4 - 10 p.m. Make your reservation online with OpenTable.
